You’ll Need:

1/2 container/100g darker sugar, firmly pressed

1 tbsp water

1 kg/2 lb pork bear (butt) or boneless skinless pork stomach, cut into 3 cm/1.2" pieces (Note 1a)

1/4 glasses/375 ml coconut water (Note 1b)

1 eschallot/shallot , extremely finely cut (Note 2)

2 garlic cloves , minced

1/2 tbsp fish sauce

1/4 tsp white pepper

Toppings:

Red bean stew and finely cut shallots/green onions

How to Make:

  1. Place sugar and water in a vast pot over medium warmth. Blend, at that point when it bubbles and the sugar is softened (it would seem that caramel), include whatever remains of the fixings.

  2. Mix, at that point modify the warmth so it is stewing reasonably vivaciously. Not quickly, not a moderate stew (I utilize medium warmth on a powerless stove, among medium and low on a solid stove).

  3. Stew for 1.5 hours, revealed. Blend on more than one occasion while cooking.

  4. At around 1.5 hours, when the fluid has decreased down and the pork is delicate, (see Note 3 if pork isn't yet delicate), the fat will isolate (see video).

  5. Blend and the pork will dark colored and caramelize in the fat.

  6. When the fluid is altogether gone and it's presently stuck on the pork pieces, it's prepared.

  7. Serve over rice, embellished with crisp bean stew and shallots. Straightforward cured vegetables are perfect for a side in light of the fact that the new sharpness combines well with the rich pork.

  8. Did you successfully practice the recipe above? if so, share it so that your friends or relatives can also try it. thanks. :)
